Shredded Mexican beef

Ingredients

  • 2 lbs chuck roast
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 10oz can red enchilada sauce
  • BBQ rub

Instructions

  1. Season chuck roast with BBQ rub
  2. Cook chuck roast in slow cooker for 8+ hours on low
  3. In a pan heat up enchilada sauce, garlic powder and smoked paprika
  4. Shred the chuck roast, removing large chunks of fat
  5. Add shredded chuck roast to enchilada sauce
  6. Cook over medium heat until most of the liquid disappears
