Shredded Mexican beef

Ingredients
- 2 lbs chuck roast
- 1 tbsp garlic powder
- 1 tbsp smoked paprika
- 10oz can red enchilada sauce
- BBQ rub
Instructions
- Season chuck roast with BBQ rub
- Cook chuck roast in slow cooker for 8+ hours on low
- In a pan heat up enchilada sauce, garlic powder and smoked paprika
- Shred the chuck roast, removing large chunks of fat
- Add shredded chuck roast to enchilada sauce
- Cook over medium heat until most of the liquid disappears
